Spinach Mock Pesto


Ingredients:

  • 1 Cup of water
  • 2 small peeled pears
  • 4 cups of washed fresh spinach
  • 1 teaspoon of ground ginger
  • 1/8  teaspoon of sea salt
  • ¼ cup pumpkin seeds

Preparation:

Place all the ingredients  into vita-mix or blend.  Can be warmed and tossed with cooked noodles or  warm and add protein and vegetables for soup or mix with vegetables such as coleslaw mix and cook for 40 minutes in a 350 degree preheated oven.

Warmed Apple Chunks

Ingredients:

  • 3 small apples=2cups peeled and cut
  • 1/8 teaspoon of sea salt
  • 1 teaspoon of cinnamon
  • 1 teaspoon of vanilla
  • I teaspoon of olive oil
  • 1 tablespoon of maple syrup(optional)
  • 2 tablespoons of gluten free flour mix

Preparation:

Preheat oven to 350 degrees. Mix all the ingredients together and spread out single file on a cookie sheet lined with unbleached parchment paper.  Place in of and cook for 45 minutes to an hour until lightly browned.

Mock Sourdough Roll

Ingredients:

  • ½ cup of unsweetened apple sauce
  • 1 teaspoon of baking powder
  • 1 cup of flour
  • 1/8 teaspoon of sea salt
  • 1 ½ teaspoon of dried oregano
  • 2 tablespoons of ground pumpkin seed
  • 1/8 cup of water
  • 1 teaspoon of apple cider vinegar
  • 1 tablespoon of olive oil

Preperation:

Preheat oven to 350 degrees. Mix all the ingredients together and spread out single file on a cookie sheet lined with unbleached parchment paper.  Place in of and cook for 45 minutes to an hour until lightly browned.
